Rhubarb Slush

Summer is coming and the weather is starting to get warmer, so we wanted to talk about some recipes that will help cool us off. And if you are similar to me, the rhubarb in the garden is growing, growing, and continues to grow. If you are also like me, you run out of things to do with it. After staring at the weed-like perennial for too long, I tend to become dispassionate about it and decide that it may succumb to the hands of the weed-eater. However, this recipe made me put the weed-eater away. So relax, cool down, and enjoy this great slush recipe!

Rhubarb Slush


  • 6 cups of water
  • 6 cups of rhubarb (chopped)
  • 1 1/2 cups of sugar
  • 1 - 12oz can frozen lemonade
  • 1 to 2 cups of vodka or rum (two cups is always better)
  • 7-up or Ginger Ale


Boil the water and chopped rhubarb for one minute and then simmer for five minutes. Once complete, put mixture into blender or puree with hand mixer until smooth. Add the 12oz can of frozen lemonade, alcohol of choice, and stir. Place mixture into freezer and freeze for 24 hours. Serve in a glass with 7-up or Ginger Ale.
