Chocolate Covered Bacon

Chocolate covered bacon is quick to prepare and a crowd favorite every time we serve this dish. Sweet and salty, this pairs well with a sweet sparkling wine such as Asti or Prosecco. The dessert should never be sweeter than the wine you are drinking and this rule can be hard to follow during a sparkling wine tasting. The saltiness of the bacon made this a great recipe to pair with the sparkling wines we tasted.

Chocolate Covered Bacon

  • 1 package thick cut bacon
  • 4 oz semi-sweet baking chocolate bar

Preheat the oven to 400 degrees. Cook bacon on a baking rack for 18-20 minutes.

Melt the chocolate in a double boiler while the bacon cooks.

When the bacon is crisp and crunchy, remove from oven and dab grease off. Dribble melted chocolate over the bacon with a spoon or dip the bacon in the chocolate using tongs.

Refrigerate for at least twenty minutes prior to serving.

Substitutions and Tips

  • Add sea salt while the chocolate is still soft
  • Weave the bacon through damp skewers for a ribbon effect
